Leccinum holopus  

Leccinum holopus: Mycorrhizal with birch.

Smooth, whitish cap and pore surface, which may bruise brown, stem is long relative to width of cap. Brown scabers darken with maturity. With one variety,  L. holopus var. americanum, the white flesh may slowly turn from white to reddish to gray to white when cut as reaction to exposure to air. It is in the Boletaceae family of the Boletales order.

Another white Leccinum is Leccinellum albellum, an oak associate, the flesh of which does not change color. Prep: select young, firm specimens, remove tubes, check stem for larvae; sauté thin slices for two minutes.
