Russula betularum Hora
is typically a shade of pink to yellowish pink. The cap is smooth, frequently viscid and yellowish on the disc, while the margin is striate-tuberculate. The cuticle can easily be removed completely. The gills white to slightly cream and have somewhat serrated edges. The stem is white and brittle. Flesh white, very fragile and has a somewhat fruity or HONEYLIKE ODOR. The taste is stinging hot. Spores are white. Associated with hardwoods, particularly birch. It is a European species which has been confirmed by DNA anylysis to also exist here in the northeast of North America. It is in the Russulaceae family of the Russulales.
