Russula mutabilis Murrill
is in the foetid group of russulas that have a maraschino cherry or almond aroma. Brownish-orange tacky cap with yellowish bloom on margin of younger specimens and a shallow central depression and striate margin on older ones. (It is the sole russula in the foetid group with an orange-brown cap and yellowish stem). Cap cuticle peels at least half-way. Gills close, cream colored with red specks developing as the fruiting body matures. Yellow-orange stem (except top third of stem is whitish). Stipe bruises reddish from base upward. Mycorrhizal with oaks. It is in the Russulaceae family of the Russulales.
